Vinification: from a very soft pressing of the grapes the must is obtained which is fermented at low temperature. The “tirage” is carried out in spring with the addition of selected yeasts and the second fermentation in the bottle, including the aging period on the yeasts, lasts at least 30 months. 
This is followed by the disgorgement of the bottles which are filled with the same sparkling wine.
Colour: straw yellow, with persistent perlage.
Bouquet: fresh and persistent, typical notes of lees aging.
Taste: savory, fresh and pleasant.
Alcohol: 13% vol.
Serving temperature: 8 °C
Best with: Excellent as an aperitif. It goes well with fish and shellfish; perfect accompaniment to hot and cold appetizers, meats and white meats.
